I developed this recipe for a client who wanted only a few things to measure and wanted a fairly hearty pancake option. Protein was a challenge, I used the Bob’s Red Mill Buttermilk Pancake mix as the base and then added to it. Instead of syrup, we topped it with a super easy fruit compote. I also used a flavorless coconut oil cooking spray to minimize the pancakes sticking to the pan.
Why it matters…
This recipe packs about 18 grams of protein and 10 grams of fiber per serving. With lower added sugar, this recipe becomes more balanced. For those watching their intake of fats, the oil in the recipe on the package was swapped for applesauce which makes it a little sweeter naturally and adds moisture to it.
Easy Protein Pancakes

Ingredients
1.5 Cup 1.5 Bob's Organic Buttermilk Pancake Mix
1 Tbsp 1 Unsweetened applesauce
2 2 Eggs
1 Tsp 1 Vanilla Extract
1/2 Tsp 1/2 Cinnamon
1 Spray 1 Coconut Oil Spray
Directions
- Beat eggs and add in applesauce, vanilla extract, cinnamon, and pancake mix. Blend well.
- Heat pan to medium heat and spray with cooking oil.
- Using a 1/4 cup measuring cup, portion the batter onto the pan.
- Cook until you see bubbles forming and then flip. Cook until slightly brown on both sides (about 2-3 minutes per side).
