Why I like this…
I like using a berry compote over syrup as a healthier alternative which can be used on pancakes or even as a topper for plain yogurt. On the surface, it may appear like too much work, but it comes together in just a few minutes and you can make batches of it that you can freeze for use later.
Why it matters…
As an alternative to traditional syrup, this compote can act as a serving of fruit and offers potassium and vitamin C.

3 Cups 3 Frozen berries
3 Tbsp 3 Orange Juice
1/2 Tsp 1/2 Cinnamon
1/2 Tsp 1/2 Vanilla Extract
2 Tbsp 2 Honey
Directions
- Put frozen berries into a medium saucepan.
- Add honey and orange juice.
- Bring to a boil over medium heat. Turn heat down to a simmer. Cook down until slightly thickened (about half the volume).
- Remove from heat and mix in the vanilla.
- Let cool and divide into roughly 1/4 cup servings.
