Why I like this…

This recipe combines many whole foods that support health and well-being.  I first made this cider in my master’s program as part of our cooking components. This vinegar tonic is a blend of spicy and herbal notes, designed to be part food and part medicine. The recipe below is adapted from Rosemary Gladstar, a renowned herbalist who developed and taught herbal studies in the early 1980s.

Why it matters…

The vinegar is infused with health-supporting herbs, roots, and ingredients with healing properties. You can take a teaspoon of it with 4 oz of water as an immune-supporting shot, or mix it into a lemon-ginger tea, or combine with honey or maple syrup if taken by the teaspoon. Apple cider vinegar contains beneficial bacteria (probiotics) and is immunosupportive. Garlic and oregano support the immune system against viruses. Horseradish and ginger are supportive for coughing and colds. It also contains anti-inflammatory properties and beneficial phytochemicals.

Fire cider can be used to help support the immune system and digestion. You can take 1-2 tablespoons per day as a "shot" diluted in 4-8 oz of water for immune system support. Or you can add it to juice, mix with honey or maple syrup, use it in dressings or marinades or even as an additional ingredient to dishes where an acid is needed.

** As a note, I made a large batch and used a large container to accommodate all of the ingredients I wanted to add.

Ingredients

  • 8 Cloves 8 Garlic- peeled and sliced

  • 6 Inches 6 Ginger-peeled and sliced

  • 4 Inches 4 Horseradish root, peeled and sliced into chunks

  • 10 Inches 10 Turmeric-peeled and sliced into chunks

  • 2 2 Jalepenos- whole- tops sliced off

  • 3 3 Serrano peppers- whole- tops sliced off

  • 2 2 Ancho chilis- whole- tops sliced off

  • 1 1 Orange- peel and juice

  • 3 Sprigs 3 Rosemary

  • 3 Sprigs 3 Oregano

  • 32 oz 32 Apple Cider Vinegar (with the mother)

Directions

  • Add all of the ingredients into the jar. This doesn't have to be perfect, just layer them a bit.
  • Add the apple cider vinegar and juice from one orange and make sure not to overfill.
  • Let sit for 2-4 weeks and shake it daily. You are infusing the healing properties of the ingredients into the mixture.
  • Strain the mixture after this time and you can either begin using or add more to it.
  • Once strained, store in a glass jar or container.
