Why I like this…

When I wait to eat breakfast OR have an intense workout, I like to refuel but want something that will tide me over for quite a bit. I like something warm and hearty in the winter, so I love these protein-power oats when temperatures fall. 

Why it matters…

These oats offer a balance of nutrients, including protein, fiber, and healthy fats. When refueling after a workout, you want to make sure you are getting a balance of protein and carbohydrates. While this is higher in carbohydrates than other options, this bowl of oatmeal is balanced and packs nearly 24 grams of protein and almost half the recommended dietary fiber intake at almost 15 grams.

Ingredients

  • 1 Cup 1 water

  • 1/2 Cup 1/2 rolled oats (quick cooking)

  • 1/4 Cup 1/4 egg white

  • 1/8 cup 1/8 walnuts

  • 1/4 cup 1/4 blueberries

  • 1 Tbsp 1 chia seeds

  • 1 tsp 1 cinnamon

  • 1/4 tsp 1/4 vanilla extract

Directions

  • Add water, oats, vanilla, and chia seeds. Cook in the microwave for 1 minute.
  • Slowly stir in egg white and continue to stir until oats become thick and creamy.
  • Return to microwave and cook for 1 more minute. If necessary, add more water to reach a desired creamy consistency.
  • Sprinkle cinnamon powder and top with walnuts and blueberries.
