Why I like this…

This yogurt panna cotta is the perfect summer dessert. It is light but decadent and packed with nutrients. While the recipe takes time (it requires overnight chilling), it is relatively easy to put together. I made this recently when family came into town, and we had it for dessert, then snacked on it again the following day at brunch. 

Why it matters…

This recipe packs a lot of nutrients in each serving. It is full of bone-healthy elements like 190 mg of calcium as well as phosphorus and vitamins D and K.  By using a variety of colored berries it is packed with different phytonutrients as well as about 10 grams of protein per serving. When eating a “sweet” it is nice to have something that is not only refreshing but also healthy.

Read the recipe thoroughly. This chills overnight, so although the cooktime is low, the time to prepare is longer.

Ingredients

  • Yogurt Panna Cotta
  • 2.5 Cup 2.5 2% Milk

  • 1.5 Tablespoons 1.5 Gelatin (roughly 1.5 Knox packets)

  • 1/4 Cup 1/4 Maple Syrup

  • 2 Cups 2 Greek Yogurt (Low fat-plain)

  • 1 Bean 1 Vanilla Bean

  • 1.5 Tsp 1.5 Vanilla Extract

  • 1/2 Cup 1/2 Mint leaves (garnish- optional)

  • Balsamic Berries
  • 1 Lemon 1 Lemon- Zested (about 1 Tbsp)

  • 4 Cups 4 Mixed Berries

  • 1 Tbsp 1 Balsamic vinegar

  • 2 Tbsp 2 Maple Syrup

  • 1.5 Tsp 1.5 Vanilla Extract

Directions

  • Mix gelatin with 1/4 cup of milk and let stand for 10 minutes.
  • Put the yogurt into a medium bowl and add 1.5 tsp of vanilla extract. Next, using a knife, slice open the vanilla bean and scrape the seeds into the yogurt mixture. Thoroughly combine this and set it aside.
  • Heat the remaining milk and maple syrup in a saucepan over medium heat. Slowly add the gelatin mixture to the warmed milk, stirring until thoroughly combined (10-15 min). Watch your heat and make sure it does not boil.
  • Once thoroughly combined, remove the mixture from the heat and let it slightly cool. Then add this mixture to the cold yogurt mixture in your bowl. Fully combine the panna cotta.
  • Pour the panna cotta into eight ramekins or other serving dishes. Put in the refrigerator until cold. Once cold, cover with plastic wrap and chill overnight until firm.
  • Berries & Serving
  • Within an hour of serving, you will want to prepare your berries.
  • Combine your berries in a bowl. Add 1T balsamic vinegar, 2 T maple syrup, 1.5 tsp vanilla extract, and lemon zest to the bowl and combine. Set aside for a minimum of 30 minutes at room temperature, stirring occasionally.
  • Pull ramekins out and top with berries and a mint leaf. Alternatively, you can unmold the panna cotta on a plate by taking a knife around the edge until it releases and then top with berries and mint.
