Why I like this…
This recipe was driven by three things that I had on-hand: fresh peaches, basil and hot honey. While in Buffalo visiting family, we went to a farmers market and found the most beautiful peaches. Returning home, I realized my basil was exploding and I needed to use it. The hot honey was sent to me as a gift from my cousin and I wanted to find a fun way to combine these into a summer dish and now we ALL get to benefit from it!
Why it matters…
Using fresh produce at this time of year is a GREAT idea because the fresher the fruit or vegetable, the higher the nutrients. Peaches are delightful for summer and are packed with antioxidants and rich in vitamins A,C, K, E, and B vitamins- especially niacin.
Hot Honey Basil Chicken with Carmelized Peaches

1.5-2 lbs 1.5-2 Chicken Breast
2-3 2-3 Peaches
3 Tbsp 3 Hot Honey (or reg honey + red pepper flakes to taste)
2 Tbps 2 Fresh basil, slided into ribbons
2 Tbsp 2 Olive Oil
1 Tsp 1 Butter
1 Tbps 1 Balsamic Vinegar
1/4 Tsp 1/4 Red pepper flakes
Directions
- Pat chicken breast dry. Salt and pepper to taste.
- Cut peaches into slices.
- Slice basil into ribbons and set aside.
- In a small bowl whisk together 2 tbsp hot honey, balsamic vinegar, and a pinch of salt (if desired).
- Eat 1 tbsp olive oil over medium heat.
- Cook chicken 4-5 minutes each side until slightly brown and set aside (temp should be 165 degrees F).
- In the same pan, melt the butter and add 1 tbsp olive oil. Place peaches wedge side down and cook for 2-3 minutes until lightly browned. Flip and repeat on other side. Add 1/4 tsp red pepper flakes and mix well.
- Place chicken on platter and add peaches. Add basil to hot honey sauce and pour over top and serve.
