Why I like this…

I was looking for something fresh and was craving carrots. I LOVE colorful carrots, which is why I used some pre-shredded ones and added a pop of purple and yellow carrots as well. Why do I like this? Well, it is really nutritious but more importantly, really easy to make!

Ingredients

  • 1 Lb 1 Carrots-Shredded

  • 2 Tbsp 2 Extra Virgin Olive Oil

  • 2 Tsp 2 Dijon Mustard

  • 1.5 Tbsp 1.5 Lemon Juice

  • 1 Tsp 1 Honey

  • 1/2 Tsp 1/2 Cumin

  • 2 Tbsp 2 Orange Zest (about 1 orange)

  • 2 Tbsp 2 Flat-leaf parsley

  • 2 2 Green Onions (green part only- sliced)

Directions

  • Grate the carrots or use pre-shredded carrots. Cut the green onions.
  • Combine the olive oil, Dijon mustard, lemon juice, cumin, honey, salt, pepper, parsley, and orange zest into a bowl.
  • Toss the carrot and onion mixture with the dressing.
  • Chill for 20 minutes or more to allow flavors to blend. Serve.
