Why I like this…

I like this because it has that simple “fresh” feel about it. I like the hint of sesame, balanced with ginger, and a pop of spice. What I REALLY like about it is that I can make it ahead of time and then gently reheat just before serving.

Why it matters…

Ingredients

  • 1 Lb 1 Ground turkey

  • 1 Tbsp 1 Ginger, grated or minced

  • 2 Whole 2 Green onions, thinly sliced

  • 2 Tbsp 2 Soy sauce

  • 1 Tsp 1 Fish sauce

  • 1 Tsp 1 Sesame oil

  • 1 Clove 1 Garlic, minced

  • 1/2 Tsp 1/2 Chili flakes

  • 1 Tsp 1 Rice vinegar

  • 1/4 Cup 1/4 Cilantro, chopped

  • 1 Tsp 1 Avocado or MCT oil

  • 1 Head 1 Butter lettuce (leaves separated and washed

Directions

  • Heat oil over medium-high heat in the skillet. Add the ginger, garlic and saute until garlic is slightly turning color.
  • Add ground turkey, breaking it apart. Cook until it is no longer pink (about 5-7 minutes).
  • Add soy sauce, fish sauce, vinegar, sesame oil, chile flakes and the white part of the green onions. Mix well until turkey is fully coated and cook for another 2 minutes.
  • Turn off the heat and stir in the cilantro and green onion tops. Spoon out onto bib lettuce and serve!
